Elevated Poolside Experiences
The largest pool in Beverly Hills – the world-famous Aqua Star Pool – captures the spirit of Southern California leisure with its breezy and inviting atmosphere. As the place to “see and be seen”, the pool is perfect for laid-back lounging and a pampered poolside experience.
New for this season, The Beverly Hilton has partnered with Prince of Scots to blend the hotel’s mid-century modern flair with trendy offerings that transform the hotel’s summer hub, including new umbrellas, a curated collection of whimsical pool floats, and luxury cocktails served in Prince of Scots Legends of Hawaii Copper Tiki Cups.
The Hotel Poolside Experience will feature cocktails served in the first ever hand forged copper tiki mug designed and created by Prince of Scots. The Beverly HIlton has created the Summer Like a Star Cocktail served in mid-century charm.

1⁄2 ounce Goslings 151 rum
3⁄4 ounce lime juice
1-ounce pineapple juice

CIRCA 55 will offer a curated cocktail menu inspired by notable moments in the hotel’s star-studded history. Once the sun sets over the Hollywood Hills, the Aqua Star Pool transforms into a vibrant, alluring space – the pool shines brighter than ever as cheerful hues light up the pool deck to create a colorful, cinematic atmosphere. The fun continues into the night with a daily reverse happy hour menu from 9:00-10:00 p.m. with refreshing signature cocktails, wines and beers paired with light bites.

The Beverly Hilton’s acclaimed dining concepts will set the stage for celebration this summer, offering al-fresco dining and happy hour libations poolside or overlooking magnificent city views. Guests can enjoy fresh culinary dishes and vibrant new offerings at CIRCA 55, a revamped menu. On warm nights, guests can head to the rooftop at Sant’olina to enjoy light and fresh Mediterranean favorites with a Southern California twist. Guests can admire sweeping golden hour views of the Los Angeles skyline during rooftop happy hour at Sant’olina – offering seasonal bites such as Halloumi Fries with tzatziki and grilled flatbreads with tahini and fresh heirloom tomatoes, chickpeas, eggplant and herbs accompanied by hand-selected wines, craft beers and refreshing cocktails.
CIRCA 55 is open for breakfast Monday-Friday from 7:00-11:00 a.m., weekday lunch from 11:00-3:00 p.m. and dinner from 5:00-10:00 p.m. daily. Sant’olina is open from Tuesday-Sunday and offers happy hour from 5:00 - 6:30 p.m. and dinner from 5:00 p.m. nightly.
